Busy Bee's

Dear Readers,

My apologies for our recent lack of blogging. Bethany has being concentrating on her personally blog and crafty bits. However we know we can't carry on like this as bee will be getting rusty from lack of use.

Does anyone have any suggestions as to what ice cream we can make next here at bee HQ?

Scrumptious stem ginger ice cream

Dear Readers,

After my early morning start to make stem ginger ice cream, it looks ok but I'm waiting for the ginger expert (my granddad) to give his opinion on it and offer some advice because I'm not going to lie to you I'm not really the biggest fan of ginger and wouldn't have a clue what a good ginger ice cream tastes like :-/

Anyway here's my Recipe...

Ingredients:
250 ml double cream
125 ml water
3 oz caster sugar
3 egg yolks
3 oz finely chopped stem ginger
1 tablespoon of syrup from the ginger jar

1. Place the sugar and water into a saucepan and on a low heat, heat until the sugar has dissolved. When dissolved, increase the heat and bring to boiling point, then boil the mixture for 2-3 minutes.

2.Remove the pan from the heat, allow the mixture to cool a little and then pour onto the egg yolks whilst whisking as pouring. Whisk until the mixture is like a mousse in texture.

3. Separately whip the double cream until thick and then fold the chopped stem ginger into it. Take this and slowly fold in the ginger syrup mix.

4. Transfer the mousse like mixture into the whipped cream bit by bit.

5. Finally transfer the complete mixture into an ice cream maker and follow the manufacturer's instructions.

And this is what it looks like...

Now we may be punching above our weight by trying to produce a stem ginger ice cream (our granddads favourite) but we like a challenge so were going to give it a go and hope for our granddads seal of approval. Wish us luck!

WOW our Luscious Lemon Meringue Ice Cream.

Let us introduce to you... Our Luscious Lemon Meringue ice cream...

Bee has really amazed us all at HQ with our Luscious Meringue Ice Cream. For a first attempt Bee has perfected it and we really have come up trumps (if we do say so ourselves).

Me and Jack are floating in lemony delight with this soft, fluffy and very lemony ice cream complimented by the crunch from the meringue. Just as we were hoping.

Thank you for reading, please join us again soon for the next batch of ice cream which will be jacks choice!
